Ingredients

  • Two pounds of boneless, skinless chicken breasts or thighs

  • Two canned chipotle peppers
  • Two tablespoons of adobo sauce from the chili pepper can
  • One shallot
  • Four cloves of garlic

  • Two teaspoons of chili powder
  • One teaspoon of dried oregano
  • Two teaspoons of salt
  • One tablespoon of coriander

Prepare the Marinade

Turn on the food processor and let it run until the ingredients form a paste. The paste will serve as the marinade for the chicken.

Next, remove the marinade from the food processor and transfer it into a bag. Pop the chicken in the bag and coat it with the marinade. You need to let the chicken marinate for at least twenty minutes, but you can leave it in the bag for as long as three days. Just be sure to refrigerate it so the chicken does not go bad. Grill the Chicken

First, fire up the grill, preheating it to medium-high heat. Take the chicken out of the bag and place it on the grill. Let it grill for six to seven minutes before flipping it. Once it grills for another six to seven minutes, turn down the heat on the grill. Then reposition the chicken to a cooler spot on the grill. Check the internal temperature and remove the chicken once it reaches 165 degrees Fahrenheit.
