May be it is because of the atmosphere as you gather with family and friends around the pool or backyard. Whatever the reason, grilled food is a popular option. As well liked as grilling can be, anything can become monotonous if you cook it the same way every time. Are you tired of grilling the same things in the same way every weekend? If so, you can mix it up by using this recipe for Grilled Chipotle Chicken. First, find out how to make this spicy dish. Then grab your ingredients and start grilling.

You probably already have many ingredients on hand to make Grilled Chipotle Chicken. The recipe calls for the following ingredients:

  • Two pounds of boneless, skinless chicken breasts or thighs
  • One fourth cup of olive oil
  • Two canned chipotle peppers
  • Two tablespoons of adobo sauce from the chili pepper can
  • One shallot
  • Four cloves of garlic
  • One and a half tablespoons of cumin
  • Two teaspoons of chili powder
  • One teaspoon of dried oregano
  • Two teaspoons of salt
  • One tablespoon of coriander
  • Lime juice and cilantro for garnish

Prepare the Marinade

Before you head out to the grill, you need to take a little trip to the kitchen to prepare the marinade. You will place all the ingredients for the marinade into the food processor. Turn on the food processor and let it run until the ingredients form a paste. The paste will serve as the marinade for the chicken.

Next, remove the marinade from the food processor and transfer it into a bag. Pop the chicken in the bag and coat it with the marinade. You need to let the chicken marinate for at least twenty minutes, but you can leave it in the bag for as long as three days. Just be sure to refrigerate it so the chicken does not go bad. If you are using frozen chicken, then be sure to allow the chicken to thaw before you marinate it. Set it out in the sink early that morning. It should be ready that late afternoon or evening to marinate.

Grill the Chicken

First, fire up the grill, preheating it to medium-high heat. Take the chicken out of the bag and place it on the grill. Let it grill for six to seven minutes before flipping it. Once it grills for another six to seven minutes, turn down the heat on the grill. Then reposition the chicken to a cooler spot on the grill. Check the internal temperature and remove the chicken once it reaches 165 degrees Fahrenheit.

The chicken will smell so good that you will want to dig right in, but let it sit for five minutes. Then garnish it with cilantro and lime juice, and dig into the tasty meal.

It is hard to believe that something so delicious can be so simple to make. Give this recipe a try this weekend to see why it is such a hit for the summertime.
